Panelists include: Kate Lawrence, a writer and longtime activist on food and other environmental issues, is the author of The Practical Peacemaker: How Simple Living Makes Peace Possible (Lantern Books, 2009). She is a reference librarian with the Denver Public Library and past president of the Vegetarian Society of Colorado.
Keith Akers is the coordinator of Denver Energy Awareness. He is the author of A Vegetarian Sourcebook: The Nutrition, Ecology, and Ethics of a Natural Foods Diet (Putnam's, 1983) and The Lost Religion of Jesus: Simple Living and Nonviolence in Early Christianity (Lantern Books, 2000).
